The reason he did this was because George told him not to mess with her and if he does he could get them in a lot of trouble and possibly ruin their dream of having a farm together. Lennie remembers this but because she persuades him to just talk to her since no one is around he does so and, like George said gets them, mostly himself in a lot of trouble.
